Bits of wisdom: steak
Denis's bits of steak wisdom... A freshly-packaged steak will usually have a "best-before date" set to 5 days past packaging date. Over time, I noticed steaks were exceptionally great on the best-before date. My hypothesis is that the fibers are more broken down, producing a more tender steak that absorbs more flavor from herbs and spices. Perhaps, this is a partial "marinating" effect at play?
Or, something else is at play here...
