Coffee brewing: don't boil the water!

I love to play around with different ways of making coffee. That got me thinking... the biggest impact to my coffee quality has been setting an appropriate brew temperature. A typical recommendation for brewing coffee is at 195 - 205 degrees Farenheit. I've noticed that cups of coffee brewed by myself and from cafes are more likely to taste better when brewed below boiling at the recommended temperature range, and kept there (and no higher). For reference, boiling is at 212 degrees Farenheit. In any case, a coffee that's molten-lava-hot is physically not drinkable anyways. With the appropriate gear, brewing/holding the coffee at a reasonable temperature is a no-brainer.
